Oatmeal Banana Bread with Chocolate Chunks

- 3 ripe bananas (about 300g, peeled and mashed)
- 200g rolled oats (you can blend them into oat flour for a finer texture)
- 2 large eggs
- 50g honey or maple syrup (optional for extra sweetness)
- 1tsp baking soda
- 1 tsp lemon juice
- 1 tsp vanilla extract
- 2 tsp cinnamon (optional) but you don't wanna miss it!
- 50g dark chocolate chips
- Topping:
- Banana slices and extra chocolate chips

Instructions:

Preheat the Oven: Preheat your oven to 180°C (350°F) and line a loaf pan with parchment paper or grease it well.

Prepare the Wet Mixture: Mash the bananas in a large mixing bowl until smooth. Add the eggs, honey, vanilla extract, and cinnamon (if using). Mix well.

Add Dry Ingredients: Stir in the oats, baking powder, baking soda, and a pinch of salt. Mix until everything is well combined. If you're adding chocolate chips, nuts, or raisins, fold them in at this stage.

Pour into Pan: Pour the batter into the prepared loaf pan. Smooth the top and garnish with banana slices or extra chocolate chips.

Bake: Bake in the center of the oven for 40-50 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
