Instructions:

  1. Preheat the Oven: Preheat your oven to 180°C (350°F) and line a loaf pan with parchment paper or grease it well.

  2. Prepare the Wet Mixture: Mash the bananas in a large mixing bowl until smooth. Add the eggs, honey, vanilla extract, and cinnamon (if using). Mix well.

  3. Add Dry Ingredients: Stir in the oats, baking powder, baking soda, and a pinch of salt. Mix until everything is well combined. If you're adding chocolate chips, nuts, or raisins, fold them in at this stage.

  4. Pour into Pan: Pour the batter into the prepared loaf pan. Smooth the top and garnish with banana slices or extra chocolate chips.

  5. Bake: Bake in the center of the oven for 40-50 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool and Serve: Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Tips:

  • For a smoother texture, blend the oats into oat flour before mixing.
  • This recipe is naturally gluten-free if you use certified gluten-free oats.
