  • 300g ground chicken or minced meat (pork, beef, or a combination) i used beef
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 5-6 Thai bird's eye chilies, finely chopped (adjust to taste)
  • 2 shallots, thinly sliced
  • 1 cup holy basil leaves, loosely packed
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon fish sauce
  • 1 teaspoon sugar
  • 1/4 cup chicken or vegetable broth
  • 2 fried eggs (optional, for serving)
  • Jasmine rice, cooked, for serving

Hoe maak je het?

  1. Prepare Ingredients:

    • Mince the garlic.
    • Finely chop the Thai bird's eye chilies.
    • Slice the shallots thinly.
    • Pick the holy basil leaves from the stems.
  2. Cooking:

    • Heat vegetable oil in a wok or large skillet over medium-high heat.
    • Add minced garlic and chopped Thai chilies. Stir-fry for about 30 seconds until fragrant.
    • Add sliced shallots and continue stir-frying for another 1-2 minutes until they become translucent.
  3. Cook Ground Meat:

    • Add the ground chicken (or minced meat) to the wok. Break it apart and cook until browned.
  4. Seasoning:

    • In a small bowl, mix together oyster sauce, soy sauce, fish sauce, and sugar.
    • Pour the sauce over the cooked meat and stir well to combine.
  5. Add Basil Leaves:

    • Pour in the chicken or vegetable broth and add the holy basil leaves. Stir until the basil wilts and is well combined with the other ingredients.
  6. Adjust Seasonings:

    • Taste and adjust the seasoning, adding more soy sauce, fish sauce, or sugar if needed.
  7. Serve:

    • Serve the Pad Kra Pao over cooked jasmine rice.
    • Optionally, top each serving with a fried egg.
